Mangrove honey is a global product, not a Florida one — and the geographical clarity matters because the trade and the wildlife are distributed unevenly across the world's mangrove forests.
The Sundarbans (Bangladesh and West Bengal, India) is the world's largest contiguous mangrove forest and the iconic mangrove-honey region. The traditional Mawali honey collectors wade into the tidal forest each season to locate wild Apis dorsata (giant honeybee) colonies in the mangrove canopy and harvest by hand — a practice passed down through generations and tied closely to the region's ecological and cultural identity. Sabancuy, Campeche, Mexico is the major Western Hemisphere commercial producer — Apis mellifera beekeeping in Avicennia germinans black-mangrove stands along the Gulf of Mexico coast. The honey moves through both Mexican domestic markets and US specialty importers.
Saudi Arabia (Yibyab Red Sea coast) and the United Arab Emirates produce Avicennia marina honey at smaller scale for the Middle Eastern market. Mangrove honey is well-known in Gulf cuisine.
Florida Gulf and Keys produce US mangrove honey from Avicennia germinans and (secondarily) Rhizophora mangle (red mangrove) and Laguncularia racemosa (white mangrove). Historical Florida production was substantial; modern production is much reduced — coastal development, hurricane damage to mangrove forests, and the protected status of much of the remaining mangrove coastline have shrunk the available apiary footprint. Florida mangrove honey is a regional specialty rather than a national-distribution product.
The terroir story is consistent across all of these regions: mangrove trees pull water and nutrients through their adaptations to brackish, saline conditions. The nectar carries the mineral signature of that environment — potassium, calcium, magnesium — in concentrations meaningfully different from inland floral honeys. The salted-caramel character that defines mangrove honey on the palate is the direct expression of that coastal mineralization.
In the Yucatán, the Maya kept Melipona beecheii stingless bees in mangrove-adjacent forests for centuries before European honeybees arrived in the Americas. Xunan kab ("royal lady") honey is the resulting product — a distinct stingless-bee honey with its own sensory profile, kept by Maya beekeepers as part of a cultural practice that traces back well over a thousand years. Xunan kab and Apis mellifera mangrove honey are different products with different ethnobotanical histories; both deserve their own page-level treatment.
