Gallberry is the nectar of two species under one common name. Ilex glabra (gallberry, inkberry) is the dominant commercial source — a small holly shrub native to the pocosins and flatwood ecosystems of the southeastern United States. Ilex coriacea (large gallberry, sweet gallberry) is the secondary commercial contributor, yielding paler and milder samples mostly from Florida and SC coastal stands. Both are Aquifoliaceae — the holly family. Both grow dense and scrubby in fire-adapted, wetland-adjacent landscapes, producing small white flowers in late spring. The name comes from the bitter berries that follow the bloom — berries that give the plant its ecological character but have nothing to do with the honey's flavor. The honey itself is light amber, delicate, and crystallizes slowly, staying liquid for months on the shelf while everything else around it sets.
The longleaf pine ecosystem once covered roughly 90 million acres across the southeastern coastal plains. Gallberry thrived in the understory of these ecosystems, blooming reliably in the spring window when other nectar sources were sparse. For a century, from roughly the 1880s through the 1980s, gallberry was the specialty honey of Georgia and northern Florida. Beekeepers positioned hives in pocosins and managed flatwoods specifically to capture the gallberry bloom. The honey became famous enough to appear in regional markets under its own label.
Then the forest vanished. Longleaf pine ecosystem conversion for timber, agriculture, and development reduced those 90 million acres to roughly 3 million. The pocosins were drained for farmland. The fire-adapted flatwoods were suppressed and converted. Gallberry, dependent on that ecosystem structure, became scarce. Production collapsed. Within two or three decades, gallberry honey went from a regional staple to a forgotten specialty. Most beekeepers alive today have never worked a gallberry bloom.
Restoration is happening. Longleaf pine habitat restoration has become a priority for conservation organizations, government agencies, and private land trusts across the Southeast. As those ecosystems recover, gallberry returns. The honey is becoming available again in small quantities from beekeepers working restored pocosins and managed flatwoods. It will not be a mass-market honey again. But for beekeepers and honey enthusiasts interested in regional character and the intersection of agriculture and conservation, gallberry honey represents something deeper: a honey whose presence depends on a forest being restored.
