Polyfloral honey — the bees worked whatever was blooming inside their three-mile foraging radius, and the jar reflects that mix of land, season, and weather. A Pacific Northwest blackberry-knotweed wildflower and a Texas Hill Country horsemint-mesquite wildflower are both "wildflower honey" and share almost nothing else. "Wildflower" is the trade name; multifloral is the technical term used by melissopalynologists and EU labeling regulations. There is no legal definition of wildflower honey in the United States.

New England (Vermont, New Hampshire, Maine). Goldenrod and asters dominate the late-summer/early-fall extractions, often paired with joe-pye weed, clover, and basswood from mid-summer. Medium to dark amber, deeper-bodied; the goldenrod-aster character is unmistakable in a side-by-side with a southern wildflower.
Appalachian (Tennessee through Pennsylvania). Tulip-poplar (a primary nectar source in late spring), sourwood, basswood, and ironweed feed the season. Medium amber, complex floral with slight fruity and woody undertones; the tulip-poplar contribution gives it the genus-named "bee tree" pedigree.
California coastal & Central Valley. White sage, coastal buckwheat (the plant, not the grain), manzanita, coyote brush, sticky monkeyflower. Light to medium amber, herbaceous and aromatic with characteristic bitter notes from the sage; slow to crystallize because of the buckwheat contribution.
Texas Hill Country. Horsemint (Monarda), mesquite, huajillo, prickly pear bloom, native wildflowers — a spring/early-summer flow that carries an acidic, slightly minty edge from the horsemint. Pale to medium amber.
Desert Southwest (Sonoran, Mojave, Chihuahuan — Arizona, New Mexico, southeastern California, far West Texas). Mesquite, catclaw acacia, palo verde, and a season-dependent companion mix of creosote (Larrea tridentata), tamarisk / saltcedar (Tamarix), yellow star-thistle, and Sonoran cactus blooms. Dark amber to brown, resinous and spiced; very slow to crystallize. Several of the contributing plants carry framing worth knowing: tamarisk / saltcedar is one of the American Southwest's most aggressive riparian invasives (and a regional ecologists' villain), but its sustained midsummer bloom serves as a "nectar bridge" through the dry-season gap when little else flowers — the invasive-but-prized framing the broader honey trade applies to PNW blackberry, japanese knotweed, and gorse-in-NZ applies here as well. Yellow star-thistle (Centaurea solstitialis, invasive across much of the broader American West) contributes a notably light honey character in Southwest wildflower from areas where the species has established. Indian Subcontinent (Himalayas, Western Ghats, Kashmir, Sundarbans). Sold in domestic and export markets as multifloral — the trade vocabulary differs but the category is identical. Himalayan multifloral leans lighter and more delicate from high-altitude alpine flora. Western Ghats multifloral is richer and more tropical, reflecting subtropical forest blooms. Kashmir multifloral is prized in regional markets for spring orchard and meadow bloom. A wildflower honey is the opposite contract: the jar tells you what bloomed when the bees were flying, and that changes every season. A clover honey pairs predictably and modestly. An orange-blossom honey is locked to citrus-bright applications. Wildflower's layered profile lets it sit across goat cheese and brie, alongside cured meats and pickled vegetables, drizzled into vinaigrettes, baked into rye bread. Cheesemongers reach for wildflower because it has somewhere to go with almost any pairing partner.
Buy a wildflower and a monofloral from the same region — a Vermont wildflower and a Vermont basswood, a North Carolina wildflower and a North Carolina sourwood. The monofloral is the wildflower's dominant note pulled into focus. Drinking the two side-by-side is the fastest way to understand what "varietal" means in a honey.
Premium monoflorals can be traced; commodity grocery honey often can't. But a jar of wildflower bought from a local beekeeper at a farmers' market sits between those poles — affordable, but specific to one apiary, one season, one bloom. Spring wildflower, summer wildflower, fall wildflower from the same apiary are three different honeys. A label specifying the season is telling you which bloom window the honey came from. Premium artisan wildflower often goes one step further and dates the extraction.
Melissopalynology — laboratory pollen analysis — is the only way to objectively verify the floral composition of a honey. A producer who has run pollen analysis and shares the results is at the top of the transparency ladder.
