Sumac is a two-continent story: Mediterranean spice, North American berry, late-summer honey.

Sumac honey is a monofloral honey from the nectar of sumac blossoms (Rhus), produced across the Mediterranean and eastern North America.

The genus Rhus runs across the northern Mediterranean — where R. coriaria dried and ground is the pre-lemon souring spice of za'atar, made in Cypriot and Sicilian mountain villages — and across eastern North America, where R. glabra, R. typhina, and R. copallinum berries are the Indigenous source of "sumac-ade" or "Indian lemonade." The monofloral honey is largely an eastern US product (mid-Atlantic, Appalachia, Great Lakes, New England) plus a substantial Chinese category (R. chinensis). What it is

Two species traditions, one late-summer bee crop.

The "sumac" word covers a remarkably broad family across two continents — and the parts of the plant that feed the spice trade, the berry-drink tradition, and the bee crop are not interchangeable.

In the Mediterranean, Rhus coriaria is the spice plant. Cypriot and Sicilian mountain villages have ground the dried red berries into the tangy purple powder that anchors za'atar and Levantine cooking for centuries. The Romans and earlier Mediterranean cooks used sumac as the primary souring agent before lemons reached the region in the medieval period. The spice trade is the plant's deepest commercial story.

In eastern North America, three native species — R. glabra (smooth sumac), R. typhina (staghorn sumac), and R. copallinum (winged or flameleaf sumac) — produce the upright burgundy berry cones that turn so many roadsides red in late summer. Indigenous nations across the region — Cherokee, Ojibwe, Potawatomi, and many others — soaked the berry clusters in cold water to make "sumac-ade" or "Indian lemonade," a tart, vitamin-C-rich drink documented in early ethnobotanical accounts.

The honey is a later story than either of those. European honeybees arrived at Jamestown in 1622 and only gradually spread inland; varietal sumac honey production is a 19th- and 20th-century development tied to the abandonment of marginal farmland (sumac is a pioneer species that colonizes disturbed ground) and the growth of small-scale beekeeping across the eastern interior. Today, US sumac honey comes from the species listed above — most commonly staghorn and smooth — across Pennsylvania, Ohio, Indiana, Kentucky, Tennessee, Virginia, Massachusetts, and Michigan. China contributes a substantial R. chinensis category, characterized in recent volatile-aroma work by Li and colleagues (2024) at the Chinese Academy of Agricultural Sciences, which identified (E)-β-damascenone as the dominant aroma contributor.

The honey is reddish-amber to dark amber, slightly viscous, with a buttery-nutty character on the palate and a moderate tannic edge in the finish. It is sometimes incorrectly described as "tart" — that description has migrated over from the berry drinks and from a confusion with the spice. The honey carries the plant's polyphenols but not its citric-acid-style sourness.

Anacardiaceae is the poison-ivy family — culinary and honey sumac are not the toxic species.

Sumac honey-producing species (Rhus glabra, R. typhina, R. copallinum, R. chinensis) and the spice species (R. coriaria) belong to the family Anacardiaceae — the same plant family as poison ivy, poison oak, and poison sumac. The shared family is not a reason to avoid the honey or the spice; it is a reason to know the distinction.

Poison sumac is Toxicodendron vernix — a different genus, with white berries rather than red, and exclusively wetland and swamp habitat. It does not contribute to varietal honey production: it grows in swampy ground where commercial beekeeping rarely positions colonies, and any nectar bees collect would be diluted in a wider wildflower flow rather than producing a monofloral lot. Older taxonomic schemes once placed it inside Rhus; modern systematics moved it out more than a century ago.

The honey-producing Rhus species (red berries, upland and roadside habitat) are entirely harmless. The plant-family-level caution is worth knowing for foragers identifying wild sumac for berry-drink uses or for context on the plant's chemistry — but it does not extend to either the honey or the culinary spice.

Is sumac honey made from poison sumac?

No. Poison sumac (Toxicodendron vernix) is a different genus, with white berries instead of red, and grows only in swamps and wetlands. It does not contribute meaningfully to varietal honey production. How long does sumac honey keep?

Indefinitely when stored properly. Room temperature, lid tight, away from direct sunlight. Sumac honey crystallizes within 3–6 months into a medium-fine spreadable texture; some prefer the crystallized form. To re-liquefy, warm the jar in a bowl of warm tap water for 10–15 minutes — never microwave or boil. Honey's low water content and acidic pH make it shelf-stable for years.
