What it is

For a century, gallberry was the honey that made Georgia beekeeping famous. Then the forest went away.

Gallberry is the nectar of two species under one common name. Ilex glabra (gallberry, inkberry) is the dominant commercial source — a small holly shrub native to the pocosins and flatwood ecosystems of the southeastern United States. Ilex coriacea (large gallberry, sweet gallberry) is the secondary commercial contributor, yielding paler and milder samples mostly from Florida and SC coastal stands.
