Strip away the marketing and raw vs. processed is a question about heat and filtration — nothing more mysterious.
Raw honey is extracted, lightly strained, and jarred, kept below the temperature where its heat-sensitive components change. Processed honey is heated and finely filtered to make it pour clear, stay liquid longer, and resist crystallizing on the shelf. Both are real honey. What differs is what survives the journey from comb to jar: raw honey keeps its pollen and its full set of enzymes; processing trades some of those away for clarity and shelf stability.

So which should you buy? It depends on what you want from it, not on a health calculus.
Choose raw if you want fuller aroma and flavor, you don't mind cloudiness or faster crystallizing, and you value pollen for traceability — it's the closer-to-the-comb product. Choose processed if you want a clear, pourable honey that stays liquid, or you're cooking with it where the subtleties cook off anyway. For tasting honey as honey — which is what this whole site is about — raw gives you more to taste. For a squeeze bottle in the pantry, processed is fine.
Is raw honey healthier than processed?+
That's not a claim we make — and “raw” isn't a regulated health term. What's true is that raw honey retains more of its original enzymes, pollen, and aroma; processing trades some of that for clarity and shelf life. The difference is in composition and flavor, not a proven health outcome.
What does “raw” actually mean?+
Generally: not heated above hive temperature and not finely filtered, so it keeps its pollen and enzymes. But it's loosely regulated, so treat it as a claim and look for the physical signs — slight cloudiness, faster crystallizing.
Why is processed honey crystal clear?+
Heating and fine filtration remove the pollen and fine particles that make raw honey cloudy and that seed crystallization. Clear-and-always-liquid usually means heated and filtered.
What is HMF?+
Hydroxymethylfurfural — a compound that rises as honey is heated or ages. It's low in fresh raw honey and used as an indicator of heat exposure and freshness.
Is ultra-filtered honey bad?+
Not necessarily, but it has had its pollen stripped, so its origin can't be verified — and that's often how mislabeled honey hides. Honey that keeps its pollen is more traceable.
