A jar goes cloudy and grainy and the instinct is to throw it out — when in fact it has changed only physically: the same sugars, enzymes, and compounds are all still there, just rearranged. Crystallization happens when glucose, the less-soluble of honey's two main sugars, comes out of solution and forms crystals. Because every honey carries a different glucose-to-fructose ratio, they crystallize at wildly different rates — some in weeks, some never. That variation isn't a quality difference. It's chemistry, written into the floral source.
Fast to never — where common honeys sit
Every honey crystallizes at its own pace, and the pace is almost entirely a story about glucose. The more glucose relative to fructose, the faster a honey sets.

It's also easier to spread without dripping and won't separate the way liquid honey occasionally can. If you prefer it liquid, decrystallize a portion gently and leave the rest set.
