Sainfoin honey is produced from the nectar of Onobrychis viciifolia — a perennial legume in the Fabaceae family (same family as alfalfa, clover, and vetch), grown primarily in France, the UK, the Italian and French Alps, and Kyrgyz mountain meadows. The plant was traditionally cultivated as livestock forage, but its deep-pink flowers produce a honey so distinctive that it became a sought-after European specialty.
The honey is characteristically extra-light in color — sometimes nearly white or pale gold — with a refined floral character and a distinctive nutty/marzipan finish that distinguishes it from other mild floral honeys. The Palate Signature places Floral 7 as the lead, Nutty 5 as the variety tell, with Fruity 3 and Herbaceous 3 supporting. Where most honeys announce themselves, sainfoin whispers — and the whisper rewards slow tasting.
What makes the variety remarkable: sainfoin honey crystallizes extraordinarily slowly. The plant's nectar carries an unusual fructose-to-glucose ratio (approximately 2.1:1, compared to typical floral honeys at 1.2:1). Since glucose crystals form first in honey crystallization, this high fructose dominance dramatically slows the process. Sainfoin honey commonly stays liquid 12+ months at room temperature; in cool storage (12–15°C), 2–3 years is achievable. When crystallization does occur, the resulting fine, soft, butter-like granules are pleasant in their own right.
As a legume, sainfoin forms symbiotic relationships with Rhizobium bacteria, fixing atmospheric nitrogen into bioavailable forms — typically 100–200 kg N/hectare annually. This makes sainfoin valuable in agricultural rotations as a soil amendment, and the nutrient-rich growing context contributes to the honey's distinctive character.
