Alpine meadow honey is place-defined polyfloral — the millefiori (Italian for "thousand flowers") tradition of high-mountain summer-pasture beekeeping. The Slow Food Presidium for High Mountain Honeys sets the bar at 1,400 meters elevation: hives kept above that line, foraging on whatever the mountain offers across the brief alpine summer.
The producing range spans the full Alps arc: Italian Alps (Piedmont, Aosta Valley, Trentino-Alto Adige, Lombardy — the heart of the Slow Food Presidium), Swiss Alps (Graubünden, Engadin), Austrian Alps, French Alps, and Slovenian Alps. The variety is anchored most strongly in the Italian Alps tradition through the Slow Food Presidium framework and documented Italian producers including MB Mieli d'Autore (the Bianco family, hives near Gran Paradiso National Park, peak production at the Sestriere foothills around 1,600m) and Mieli Thun (founded by Andrea Paternoster, marketed through Eataly).
The beekeeping practice is transhumance — Alpwirtschaft in the German Alps, the broader European tradition of moving livestock and hives to summer pasture as snowpack retreats and bringing them back down as autumn arrives. Hives are carried up by truck, mule, or footpath in early summer; the bees work the brief 6–8-week high-alpine bloom; the harvest happens in August or September before the hives return to lower elevations for winter. The compressed bloom window is part of why production is small and variable year to year — even a good Alps season yields only a few hundred quintals across the whole Italian range.
The honey is amber to dark hazelnut, sometimes naturally darkened by honeydew contribution from alpine conifer aphids (the boundary between alpine floral and alpine honeydew honey is genuinely fuzzy in many production years). The flavor is complex multifloral, warm, aromatic — "Alpenwürze" in the German Alps trade, the herbaceous-aromatic Alpine signature.
The honest-accounting note from the formal chemistry. Leoni et al. (2021, Scientific Reports, PMID 34588574) characterized Italian Alps wildflower honeys through pollen analysis and aroma chemistry, documenting that what is labeled "alpine wildflower" often pollen-tests as rhododendron/raspberry-leaning bifloral rather than the diverse multifloral the label implies. This is not fraud — it reflects the reality that a few dominant species (Rhododendron ferrugineum, Rubus idaeus, white clover, wild thyme, sainfoin) can dominate the nectar contribution in any given year. But it means flavor and composition shift with the bloom, and two jars from the same apiary in consecutive years can taste quite different. The honest-labeling work in Leoni 2021 supports altitude-and-pollen verification per jar through melissopalynology, particularly for Slow Food Presidium-claimed product.
Climate context. The Slow Food framing explicitly identifies high mountain honey as an endangered traditional product — the alpine meadows that support it are shrinking as treelines advance with warming temperatures, shorter growing seasons shift bloom timing, and earlier snowmelt reduces the overlap between bee activity and flower availability. The variety's commercial future is materially tied to alpine-ecosystem trajectories.
