The process is defined by what doesn't happen. Bees build comb, fill it with nectar, fan it with their wings to reduce moisture content to ~18%, and cap the cells with wax when the honey is ripe. The beekeeper removes the frames, uncaps the wax (by hand or with a heated uncapping knife kept below 110°F), and extracts the honey — usually via centrifugal extractor (the frames spin, honey flies out).
Straining vs. filtering: Most raw honey is strained through a coarse mesh (200-400 microns) to remove wax bits, bee parts, and large debris. This is considered part of normal raw production. Ultra-filtration (forcing honey through a sub-micron membrane under pressure) is a different process entirely — it removes pollen, enzymes, and much of the honey's character. Ultra-filtered honey is not raw by any meaningful definition, regardless of heating.
Temperature is the critical variable. Truly raw honey never exceeds hive temperature (~95°F). Some producers warm honey slightly (to 100-110°F) for easier bottling — this is a gray area. Heating above 118°F begins denaturing enzymes. Above 150°F (common in industrial processing), enzyme activity drops dramatically and volatile aromatic compounds evaporate.
Crystallization: Raw honey crystallizes faster than processed honey because it retains natural pollen grains and glucose crystals that serve as nucleation points. This is not a defect — it's proof the honey hasn't been ultra-filtered. Most raw honey will crystallize within weeks to months depending on the variety. Warm gently (under 110°F) to re-liquify without damaging enzymes.
