In North Carolina, sourwood is the crown. Across the western ridges of the Blue Ridge and the Smokies, the sourwood trees bloom for a narrow stretch in July, and the honey they make — light, amber, with a delicate spiced finish — is widely considered the benchmark sourwood in the country, the one others are measured against. East into the Piedmont, the early-season jar turns dark and brisk with tulip poplar, drawn from the hardwood bottoms before summer. Out toward the coastal plain and sandhills, it shifts again to gallberry and coastal wildflower, lighter and slower to set. The state runs mountains to sea, and the sourwood window is famously fickle — a single ill-timed rain can thin a year's harvest, so the same ridge rarely gives the same jar twice.
