In North Carolina, sourwood is the crown. Across the western ridges of the Blue Ridge and the Smokies, the sourwood trees bloom for a narrow stretch in July, and the honey they make — light, amber, with a delicate spiced finish — is widely considered the benchmark sourwood in the country, the one others are measured against. East into the Piedmont, the early-season jar turns dark and brisk with tulip poplar, drawn from the hardwood bottoms before summer.
