The Beekeeper's Story
The Rare Hawaiian Honey Company owes its existence to a single 1,000-acre Kiawe forest on the dry side of the Island of Hawai'i. Kiawe (pronounced 'kee ah' vay') is the Hawaiian name for a species of mesquite native to Ecuador and Peru, and its honey is so rare it is listed in the Slow Foods Ark of Taste. The family-run business was founded by former lawyer Richard Spiegel, who began working with bees and kiawe flowers in the mid-1970s. Their Kiawe Honey is certified organic by 'Where Food Comes From Organic' and is completely raw — never heated or filtered. The company also partners with the Marine Conservation Science Institute to produce their 'Great White Honey,' donating 10% of its proceeds to shark research and conservation.
